Hummingbirds in the Gladdys
Wash and slice 2 large sweet potatoes. Thinly slice into round discs, about 1/4 inch thick. Fry 1 1/2 to 2 1/2 minutes in hot oil, stirring frequently. Remove from oil using slotted spoon, and drain on paper towels. Do not over fill the pot with pieces or the oil temp. drops too much and they won't fry quickly.
Before completely cool, sprinkle with a homemade seasoning mix of:
1/2 cup salt, 1/4 cup black pepper, 1 Tblsp. garlic powder, and 1-2 Tblsp. of fresh or dried Rosemary leaves.
Serves 4 - 6 people.
2 C. finely chopped yellow squash 1 C. finely chopped onion
1 egg, well beaten 1 tsp. salt
1/2 tsp. pepper 1/2 C. (heaping) all-purpose flour
Combine the first 5 ingredients & mix well. Stir in flour. Drop by large tablespoonsful into frying pan with hot oil. Cook until brown, turning once; drain on paper towel. Serves 6.
Turn on oven to 375 degrees. Spray cookie sheet lightly with Pam or use some type of grease. Rinse the kale, and break leaves off thick stem into about 2 inch pieces. Put in single layer on cookie sheet. Lightly drizzle on olive oil a bit, and salt & pepper to taste. If you like them spicy; sprinkle on crushed hot pepper flakes. Bake 6 to 7 minutes...checking them very closely---so they don't burn. Remove promptly from oven and serve.
Note: may substitute yellow summer squash for Zucchini.
2 c. chopped zucchini 1 1/2 c. milk
1c. chopped tomato 3/4 c. Bisquick baking mix
1/2 c. chopped onion 3 eggs
1/2 c. grated Parmesan cheese 1/2 tsp each; salt & pepper
Heat oven to 400 degrees. Grease 10 inch quiche dish or same size pie plate. Sprinkle zucchini, tomato, onion, and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high, or 1 min. with hand beater. Pour into plate. Bake until knife in center comes out clean, about 30 to 33 minutes. Cool 5 minutes before serving. Serves 6 persons.
